Prego Italian Restaurant - All that yumminess!

I guessed this would be my last post from year 2013! My 2014 food pictures would keep stacking up if I
don't do something... Anyway, just a little bombardment of really yummy food before I jump right to the
desserts part!

More yummy food shared among my other 3 friends and I!

Tiramisu would definitely appear in most of the Italian restaurants' menu and missing it out would not be an
option! Prego's version of tiramisu was slightly different and I was not used to this different style which
distinguished it from the rest. Besides not containing any alcohol, the ladyfinger sponges from this huge
squarish block were dipped briefly with coffee, so that it retained its firmness and not turned soggy. The
chocolate sauce at its base provided the necessary moisture to counter-balance the dryness. The only thing
that I disliked was being choked by the over generous amount of cocoa powder dusting on the surface.

The chocolate mudpie was easily an attractive target among us. Who could resist such sinful indulgence of
both chocolate and ice cream in a single dessert? Although it looked a bit messy, it was still wiped clean by
us.

Xing Xing Odeh Odeh Tapioca Cake - Handmade kuehs

YAY! I had a weekday off that day and I decided to take a walk around the CBD area in search for
desserts or snacks to munch on while most people were busy at work. I specially went to try the popular
Tian Tian Chicken Rice for lunch before the lunch crowd outbreak and it was really tasty! I noticed a
queue of aunties at this ondeh-ondeh ; tapioca cake outlet and ended up buying a couple of those chewy
munchies.

Peering through the glass pane, I noticed that only 4 snacks were sold here. The ingredients used were
mainly tapioca, shredded coconut, palm sugar and obviously glutinous rice flour. I spotted the uncle behind
making more of these snacks by hand and I basically bought everything to try! You don't always have to
indulge in cakes and pastries to gain satisfaction as these kuehs were also yummy in their own ways.

My top favorite was the tapioca cake, coated generously with shredded coconut! It was the softest
tapioca cake I have ever eaten and I could barely hold the pieces upright without breaking them. The kueh
kosui was firmer and chewier and had a wonderful aroma and taste of gula melaka (palm sugar). I was
also addicted to this kueh. The odeh odeh / lor mai qi (glutinous rice balls) were like irregular ping pong
balls (not exactly round though) with thin extremely stretchy skin. They were soft but too sticky as they
kept annoyingly sticking to my fingers. The amount of coconut / peanut fillings were so generous that I
found the peanuts too compact, resulting in cluster formation. The worst was the Ubi Kayu which I
stopped after a mere bite. It was like eating into pure tapioca flesh, only mildly sweetened by a thin layer of
sugar on top.

Clarke Quay Central - Chilling at Coffee Club

The mere mention of the word Clarke Quay send many fond memories flashing back to me. The days when I was still serving my National Service (a year back), my dad used to bring the family over to Clarke Quay to dine. I love going to Clarke Quay Central not only because it houses my restaurants but also the mall itself is bright, vibrant and spacious. Window shopping leisurely in there made me feel so relax and carefree, unlike many other shopping malls which are so cramp and suffocating! Although my family patronize Tung Lok Signatures most frequently, we also did try many of the other food establishments in there! A family of foodies! Anyway, I decided to post about Coffee Club since it was one of my favorite place to chill, and partly due to this being a dessert blog. I went to dig out my Coffee Club pictures that I had neglected to blog about due to my laziness. (The 'Cravecraze' logo was actually my previous blog's name). Enjoy and carry on drooling over these lovely dessert pictures I had selected to post about!

To me, Clarke Quay would be a perfect chill out place over the weekends. One suitable location would be
the Coffee Club outlet. The bright chic setting as well as the huge variety from the menu attracted me to

chill in there.

The first dessert that came into my mind when I thought of Coffee Club was their popular Mud Pie. The
nutty one above which came in a massive slab could easily be shared among a group of friends. The gooey
sweetness from the caramel easily gave me a sugar rush while the button-size macadamia nuts provided a
crunch. I really love to sit close to the window to enjoy the partial view of Singapore River as well as to
'spy' on ants size people below.

Not wanting to have any desserts? You could get a glass of  icy beverage to chill as well.

The menu have a whole range of different desserts to choose from! How about a walk along the Singapore
river after your meal, although I know the water ..erm...just a bit polluted... The night life around Singapore

River is always super happening too!

Boom! Guess which dessert this is? Any ideas?

Don't feel like having any complicated plated desserts? The typical Blueberry Bounce (cheesecake) would
definitely suit you. Cloyingly cheesy with blueberries!

Glorious presentation! I love breaking down/dismantling such plated dessert ; enjoy
the process as it really helped to slow down my eating pace, giving me a break from
all the hustle and bustle of the current stressful lifestyle. Relax, chill, enjoy!

Another example of a dessert that brought out the slowness in me!

Cheers!

Antoinette Macarons - Round 2

After being quite impressed by the 2 macaron flavors I had tried the first time round, I made up my mind to
be back to try out 2 more of Antoinette's flavors. Personally, I am not really a huge fan of macarons as I
felt that they were getting common, overrated and expensive. Being a sucker for floral related desserts, my
first pick was Violette, which was tainted a pleasant purple! I definitely made a bad move as by the time
I got home, the buttercream was already smudging out like some busted toothpaste. I was quite
disappointed with that piece as both the shell and buttercream taste were so faint and close to flavourless.
The Grand Cru on the other hand was better with its nuttiness that swept through my unprepared palate (it
was supposed to be chocolate), while the dark chocolate ganache was rich, sinful and slightly bitter. I don't
think I could afford such indulgence that often and would not be back anything soon.

Mixed Berry Bar with Sour Apple Sauce - Randomness

Yesterday was my bake for health exam and 19 of us (my class) had to create our own healthy recipe. It
was really challenging and fun at the same time as we could freely express our creativity, exploring into our
own choice of either to create a baked or chilled dessert. My lousy phone camera did not show much
justice to my dessert, not that my dessert looked picture pretty anyway. It was my first time making this
mixed berry bar which I got the recipe from Clean Eating magazine (and I am using it for exam!). I
customised and adjusted the recipe based on nutritional value of an individual serving. Made with whole
wheat flour and rolled oats that has high fibre, it gave the bar a slightly dense and chewy texture. The
dried
blueberries,
dried apricots and dried wolfberries added a punch of vitamins, minerals as well as
antioxidant. The eggs (mainly egg white), some apple sauce and honey acts as a binder as well as natural
flavouring. Silvered almonds was for added crunch too. Basically like an all-in-one food that is low fat, low
cholesterol and extremely high energy! My applesauce is made by stewing apples with apple cider and a
pinch of cinnamon. I found such a cute little pot to place my sour dip in, and to compliment the
unappetising bite-size bars that is eaten with a toothpick.

Ladyfingers and Tiramisu!

A couple of weeks ago I decided to prepare some tiramisu since my brother have a lovely bottle of Cafe
Boheme standing stagnant in the refrigerator. Cafe Beheme is actually a coffee flavored alcohol which
make a perfect refresher after
adding a couple of ice cubes. I bet coffee and alcohol lovers would want to
try it! Anyway, I baked some lady
fingers sponge first from the recipe below:

4 egg whites
78g caster sugar (A)
15g caster sugar (B)
3 egg yolks
60g cake flour

1) Egg whites and sugar (A) for meringue (Whisk till glossy and firm peak)

2) Egg yolk and sugar (B) (Well blend)
3) Fold egg yolk mixture into meringue (Gently)
4) Fold in cake flour (Gently)
5) Pipe into fingers and bake at about 180 degrees for 12 to 15 minutes

As for the tiramisu, I used 750g of mascarpone cheese which was a bit too much
(I think 500g would do fine in future). I mixed coffee powder with the Cafe Boheme
alcohol to increase the coffee flavor and then dipped the ladyfingers into the mixture.
Lay the ladyfingers in any container/bowl, spread a layer of
Cafe Boheme infused
mascarpone on top and sieve an even coating of cocoa powder. (I repeated the
process twice for more layers.) The above was about 8 servings size, so chill it and

enjoy! I also want to thank my friends for the positive feedback!!
